About the grower · Denver, Colorado

Hey, I’m Avery. I grow the greens.

I’ve been a hobby gardener and a hands-on DIYer for most of my life. I started Restin’ Peas in May 2026, and now I grow microgreens in two rooms here in Denver. It’s a small farm with a big learning curve, and I’m beyond excited to be doing exactly what I’m doing.

Where it started

I’ve always been growing something.

I’ve lived in a hodgepodge of apartments, condos, cabins, and even a converted hallway during another chapter of my life on tour (any thespians out there??). Wherever I landed, I kept a garden.

I was raised by a couple generations of quirky, enthusiastic gardeners, so experiments come naturally: unusual varieties, new ways to grow, and ideas I hope to bring to a future farm of my own. I’m happiest with a seed catalog open, my hands in the soil, or figuring out how to turn a handful of greens into a beautiful meal.

The hydroponic garden pictured here is my personal garden for 2026. I’m excited about incorporating these hydroponic towers into the business at some point (I have dozens at this point... it got out of hand quickly!).

Where I’m headed

Tiny greens. Big plans.

Restin’ Peas is my first step toward a bigger dream: a piece of land to call home, with part of the operation planted in the ground and an abundance of greens growing alongside it. I’m especially excited about ducks and turkeys—both animals known to be full of quirks and personality. I’m really known to go down the rabbit hole on things like meat rabbits, ostriches, and bison farming. The long-term farm dream is still forming, but I know I feel most passionate about growing high-quality food in ethical ways.

I’m especially motivated by sustainability, and I’m still finding ways to balance those values while running a business in the world as it is today. I feel very knowledgeable about natural pest control methods (fighting insects with insects is seriously the coolest), but how do I get to zero plastic use? Oof, that’s a challenge.

For now, you’ll find me in central Denver. If it’s not too hectic—and it’s not 90 degrees at a market—I love talking varieties, seed catalogs, or how Paul Stamets is such a goober.

For winter 2026–2027, I’m looking forward to working with chefs, moving the microgreen operation to a larger space, and hopefully leasing some land with it!
